This is a favourite soup of mine, good for using up that miso in the fridge you might have no idea what to do with! Try it- it’s easy, simple and delicious!
What ingredients you need:
- 500ml of water
- 1 clove of garlic (with skin)
- 1 handful of cashew nuts (soaked if possible)
- 1 tbsp of miso
- 2 carrots
- 1 handful of fresh coriander/ cilantro
- 1 fingertip of fresh ginger
- 1 small piece of chilli
- 1 slice of lemon
- 1 tbsp of mixed spice
- Sea/ Rock Salt & pepper
Instructions
Blend up in a high speed blender for 2/3 minutes until warm (do not let boil), make sure it is under 42 degrees to keep raw! Alternatively blend/ food process until smooth and creamy and heat up on the lowest setting on hob and serve.
Tip **Garnish with some fresh coriander or yogurt**
