Raw carrot & coriander miso soup recipe

This is a favourite soup of mine, good for using up that miso in the fridge you might have no idea what to do with! Try it- it’s easy, simple and delicious!

What ingredients you need:

  • 500ml of water
  • 1 clove of garlic (with skin)
  • 1 handful of cashew nuts (soaked if possible)
  • 1 tbsp of miso
  • 2 carrots
  • 1 handful of fresh coriander/ cilantro
  • 1 fingertip of fresh ginger
  • 1 small piece of chilli
  • 1 slice of lemon
  • 1 tbsp of mixed spice
  • Sea/ Rock Salt & pepper

Instructions

Blend up in a high speed blender for 2/3 minutes until warm (do not let boil), make sure it is under 42 degrees to keep raw! Alternatively blend/ food process until smooth and creamy and heat up on the lowest setting on hob and serve.

Tip **Garnish with some fresh coriander or yogurt**
